Everyone around me seems to be a beer expert, yet I seem to know more than they do about what makes a truly fantastic beer. In the end a truly fantastic beer is one that is aged to perfection. This process takes at least two years. What you do is buy a six pack, put it in the back of your fridge and let it sit for two years. At that point crack it open and drink (or cook with it). It is that simple. If the beer tastes bad or the dish doesn't turn out right then it wasn't [...]

I used to think of cheddar as the cheese equivalent of vanilla. Both are decent enough dudes, good listeners, but not much in the way of adventure. If I'm going to go tagging or breaking and entering I'm going to call up smoked provolone or jalapeno jack to join me. That all changed the first time I got cheddar drunk. I remember it well, my birthday 2011. My friend Bob handed me three cheeses and some crackers. The first two cheeses seemed exciting and fresh, ready to bring the chaos, the third was a cheddar rogue stout. Despite [...]

I do love me some fine dining. I dote over jamón , I fantasize about reuniting with lobster sashimi , and I just drooled a little bit on my keyboard thinking about perfect calamari . And yet, when I think about my true favorite foods, the foods I'd happily eat day after day, they're not on that decadent, Kosher-defying list up above. They're good old simple comfort foods. And, quite often, foods that were once considered peasant fare. Not because they're any less delicious, but because they're easily accessible and usually cheap. But especially with winter around [...]

I roll my eyes at food geeks all the time. I know, I'm sort of one, but would an actual food geek forget to tell someone that nutritional yeast is in the mix ? Didn't think so. When I ask someone about a dish and they start to describe it down to the smallest detail, for instance the bread, my eyes glaze over spittle forms at the side of my brain stem and I go to my safe place (which used to be my VD until Sarah and Hannah snipped that this weekend). This week, things began to change. [...]

You learn something new everyday. Today I learned about Bread, a Chicago-based clothing line that you can now find at LDRS1354. The line is Chicago inspired, and includes tees with Mayor Daley, Mike Ditka, and other Chicago figures and hucksters. You can find the shirts at LDRS1354, and see more on the website . About Bread: Bread is a Chicago-Based clothing line founded by fashionisto Jose Ortega. Some of his creative masterpieces within the line take a satirical look at pop culture, while others delve into more serious [...]

A few weeks back I did a tasting at Burger 21 ( here ) in West Chase. While I devoured veggie burgers and shakes the meat eaters were treated to sliders and hot dogs. The first thing I noticed when they brought out the hot dogs was the bread. They weren't your typical hot dog buns. These dogs were wrapped in what Burger 21 dubbed "Lobster Rolls." Laymen might call it "Texas Toast." Naturally my curiosity got the best of me and I had to replicate it at home. I chose the restaurant's Chili Cheese Dog as my [...]

I think Zuppa means soup in another language. Even if it doesn't, I'm going to pretend it does. Zuppa Bastard, Bastard Soup. This soup is illegitimate. It came from another soup that may or may not have meant to spawn such an offspring but it just so happens that it did. It goes perfectly with Newermind and Part 1 , illegitimate children to Kurt Cobain's empire as I'm sure he is rolling in his grave hearing some of the renditions that were put forth on Spin's tribute to his band. [...]

For years I've been visiting blogs, reading their recipes for focaccia, and posting something generic like "looks good, I can't wait to finally make my own." Then I'd go back to my kitchen, get sidetracked on something else, and continue being a homemade focaccia virgin. About a week ago I finally was inspired enough to dive in and make my own. It is all thanks to Mary at One Perfect Bite . Something about her Cheddar Cheese and Olive version said 'come on baby, quit putting it off and do it now.' The final product was a [...]

Appo has redone this classic to a newage/downtempo vibe. It's a fresh take that's perfect for a nice warm/sunny day. My only criticism is its long intro that lasts for just about four minutes until getting into Bread's lyrics. However, the beat is still chill and relaxing and warms you up for Bread's beautiful vocals. This track really reminds me of some DJ Frane would sample. Make it about 2x trippier and it could pass. Appo Location: Middlesbrough, United Kingdom [...]

Bread were known as one of the premier 70s soft rock acts and rightly so, as they produced some of the best music that genre has to offer. This debut, released by Elektra in 1969, is much different than those early 70s records. Bread, is closer to Crosby, Stills and Nash's debut album (also from 1969), combining Buffalo Springfield and Byrds folk-rock influences with a Brit pop feel that recalls late period Beatles or Paul McCartney's early solo work. The album is an underrated delight. Every song is rock solid, displaying a diverse range of popular rock styles from the time, such as lite psych, [...]

When Transatlantic Zodiac Ensemble take their Eastern European folk infused klezmer grunge rock on the road inevitably they wind up in Saint John (Canada) crashing at saxophonist Martin Davidson's parent's house. It is here that his mom astounds the whole band with an amazing meal of chicken a la king over homemade biscuits. As mom wouldn't part with the recipe (OK, OK I didn't even try) I was forced to create my own version, replacing the protein with a mother with one that is a bastard child. [...]

If you've been planning a trip to Italy but haven't yet gotten the funds together, may I suggest that you forgo that plan and travel instead to the Yucatan Penninsula in Mexico. Everywhere we went (which is Cancun, Merida and Tulum) Italians and Italian fusion restaurants weren't difficult to spot (thank god for that because otherwise J-Fur might not have had anything to eat). These Molletones were inspired by a dish I had at Cafe Peon Contreras , in Merida, which was one of the aforementioned Italian fusion places. [...]

My motto about soup is simple: "Soup does it better in a bread bowl." To illustrate this statement I always use the story from a school lunch back when I was eight years old. A food fight had just broken out and I was trying to get involved by dipping my spoon into Campbells Chicken Noodle Soup (you know, the kind that has few substantial chunks of anything in it) and flinging it. Unfortunately I couldn't get the spoon into firing position before losing everything off of it. Now [...]
